At Sahagun, we get a thrill out of bringing outlandish ideas to life.  We believe in imagining new ways of tasting things and in writing love letters to our ingredients.  


KA-POW! was created for the Edible Portland Ecotrust/ Slow Food-organized event called from Bean to Buzz.  Four Coffee Roasters teamed up with four chocolatiers, chocolate makers or chocolate bar shop owners from Portland and Seattle area. 

Sahagun was paired with Stumptown Coffee Roasters and Claudio Corallo Chocolate.


I wanted to come up with something that I didn't already make,  something that I had never seen before.  I wanted to create true union/collaboration between coffee and chocolate.  I wanted to make a baby from them so to speak...

KA-POW! has the bold flavor & aroma of coffee with the physicality of chocolate, all while adding no chocolate; a coffee bar.  It has a pure coffee bean flavor and a crunchy texture without the unpleasant hardened shards of coffee bean. 


After making KA-POW!  I then made a backwards bark using KA-POW! as the medium into which I poured unmelted pieces of Claudio Corallo chocolate and nibs: a coffee bean-covered chocolate.  This one is still in the works....


in the meantime, KA-POW! has landed!  The only way to know it is to taste it.

NED LUDD now serving local chocolates for dessert

If you haven't already eaten at this scrumptiously wonderful restaurant, you have even more reason to do it:  They have rounded up four local chocolate artisans to put their work on a chocolate tasting dessert plate for those who have only enough room for a few tasty morsels after their DELICIOUS meal.


Ned Ludd is alone on pulling through for the people who have no room for a full size dessert.  No disrespect to pastry chefs.  I think a whole OTHER meal time should be dedicated to their work when people have more room to taste their amazing work When we can really appreciate their art.  Mid-day maybe?   


Anyway, a big THANK YOU to Ned Ludd for recognizing the work of chocolatiers in Portland.  We love you!
